SSP wins contract to operate four units at Perth Airport

SSP has secured a contract at Perth Airport which will see the company operate four outlets within Terminal 1 International. The new restaurants, which will complement SSP’s existing outlets, are all scheduled to open in 2025. Creating a ‘sense of place’ was a key priority in fashioning the offer, and the line-up will provide passengers with a truly Western Australian experience, and SSP has worked with local producers to source ingredients as locally as possible.

WA Cellar, a bar and casual dining concept created bespoke for Perth Airport, will evoke a sense of Western Australia through both its design and its menu. The decor draws inspiration from the local landscape with ‘cave’ and ‘rock’ elements, alongside burnished copper and aged patinas for a raw, industrial feel. It celebrates Western Australian wine and craft through its authentic, rugged aesthetic. At WA Cellar, a breakfast menu includes Eggs Benedict Focaccia, Avocado Affair (with haloumi and free range poached egg on sourdough) and a Crab Omelette. WA Cellar will offer classics such as the WA Bush Burger with Kangaroo Steak, Rock Lobster Ravioli and Calamari Fritti, as well as pizza from its own pizza oven.

A second tailor-made concept, Co & Co (Coffee & Cocktails), will also give travellers an authentic sense of the region. The aesthetic of Co & Co reflects the unique Western Australian landscape with a palette inspired by local colours and tones. It incorporates themes such as water, earth, sky, and trees, blending soft curves within rigid framing. The design is both eye-catching and creative, capturing the essence of the region’s natural beauty. At Co & Co, diners can expect to be treated to locally roasted coffee and a signature cocktail menu including the ‘Wild West’ signature cocktail using WA Swan River Distillery Miners gin, paired with tacos, bao buns and sweet treats. The menu spotlights some of Western Australia’s finest wines and beers, and there will be a focus on WA produce and producers in all food dishes.

Bringing a much-loved Aussie brand to Terminal 1, SSP has partnered with fast, fresh Vietnamese concept Roll’d, which can currently be found at over 100 locations across Australia. Roll’d began with founder Bao Hoang’s insatiable appetite for his mum’s rice paper rolls. As an adult, Bao craved more – to share Mama Hoang’s established techniques and her family’s inherited recipes, tried-and-tasted over generations. Roll’d, which is already operated by SSP at four other airports across Australia, (Sydney, Melbourne, Darwin and Brisbane) will bring its signature dishes such as Seafood Pho, BBQ Chicken Soldiers® and Vietnamese iced coffee to the hungry travellers of Perth.

Sushi Jiro will make history as the first Sushi specific outlet at Perth Airport’s Terminal 1 International, and specialises in modern Japanese cuisine. Sushi Jiro strives to curate an inviting sushi dining environment with a uniquely modern-classic Japanese theme, beautiful visual appeal, and the highest-quality fresh ingredients. SSP will be providing QR code ordering across common area seating to deliver at-table ordering from multiple outlets. This will be available in the common seating area around the restaurants.
